We’ve designed and delivered a full turnkey interior concept for Penny Blue, a signature hotel restaurant inside one of Australia’s most historic buildings, now transformed into the Adelaide Marriott Hotel. Inspired by the building’s long history as a post office, our design emphasises the rich architectural detailing still present in the spaces today.

The concept for the restaurant is oriented around the preparation and display of dishes – a play on the weighing of postage parcels that took place here in the past. As each guest enters, their eyes are drawn down the depth of the dining hall as finishes transition from honest, natural materials and neutral tones to polished surfaces and more saturated hues. We added soft sheer curtains falling from the ceiling and mottled glass screens to create intimate dining salons.

We reimagined the former postmaster’s office as a fully open kitchen, acting as a theatrical backdrop to the restaurant. The kitchen counters and fridges are wrapped in porcelain marble to evoke a sense of luxury and permanence. A joinery wall with details reminiscent of P.O. boxes surrounds the kitchen hatch, while elegant furniture pieces echo the history of the space, and engraved tabletop edges reference local stories. The strong lighting concept seamlessly transforms the restaurant from day to evening, creating an atmospheric space that guests and locals alike can enjoy.
